Opened in 2022, Hyatt Regency Jaipur Mansarovar recently got a new addition to its rooftop area: The Pink Bar, a high-concept cocktail space crafted with narrative architecture paying homage to Jaipur’s palaces. It boasts elements like chhatris, jaalis, and hand-painted pink ceilings, which connect it to the rich history and culture of the Pink City. Look away, and you’ll be greeted by panoramic views of the green expanses of Hyatt Regency’s lawns and frequent peacocks down below. Inspired by glorious sunsets, cocktails like Ramos & Roses, Old Smuggler, Syahi Picante Paloma, and Rolls Royce come in vivid reds, yellows, and oranges. The bar’s menu includes nibble-size gourmet delights to complement your drinks—think torched salmon sashimi, chicken yakitori, portobello steak sliders, and Mulwarra lamb sliders. —Shalba Sarda
Paro
Housed in a pre-Independence building on Mira Ismail Road, Paro is where Jaipur’s classic charm meets a modern party scene. The walls of the rooftop lounge have been crafted using indigenous lime plaster. Here, expect fashion-forward people, groovy music and mixology masters mingling against the dipping sun. The cocktails, such as Ratnagiri Rhapsody with cumin and kokum, are an ode to Indian flavors. The menu is Indian at heart as well but features fun twists to local concepts such as chaat and chakna. —Ria Gupta
